The water you use is 98% of your cold brew. Spring water makes it smoother, sweeter, and noticeably less bitter.
Cold brew is mostly water — about 98%, by weight. The other 2% is coffee grounds. Which means the water you use is doing almost all the work of how the final drink tastes.
Most cold brew recipes obsess over the coffee: the grind size, the roast level, the brew time, the coffee-to-water ratio. The water gets treated as a given — whatever comes out of the tap. That's a mistake. Tap water and spring water produce meaningfully different cold brew, and once you've tasted the difference, the tap version becomes hard to drink.
