Athletes have known for decades that hydration is the difference between a personal best and a DNF. What's less appreciated is that the quality of the water matters as much as the quantity. A gallon of reverse-osmosis water hydrates you differently than a gallon of mineral-rich spring water. The minerals — calcium, magnesium, sodium, potassium — are electrolytes your body uses for every cellular function, and most people are mildly deficient in them.

Add salt during heavy exercise. If you're sweating heavily for more than an hour, plain water isn't enough.
