Is Municipal Tap Water Ruining the Taste of Your Coffee or Tea?
Coffee is 98% water. Tea is 99% water. If your water tastes like chlorine or sulfur, your coffee and tea do too.
You've spent real money on good coffee. The beans are single-origin, freshly roasted, ground just before brewing. Your kettle is the right temperature. Your pour-over technique is dialed in. And the water — the 98% of the cup that isn't coffee — comes from the tap, through pipes that may be older than you are, with chlorine or chloramine added for safety.
This is the part of the recipe nobody optimizes. Most people assume water is water. It isn't. The mineral content, the chlorine, the pH, the pipe scale — all of it shows up in the cup. And spring water fixes most of it.
What's Actually in Your Tap Water
Chlorine or chloramine
Most municipal water contains chlorine or chloramine for microbial safety. Both produce off-flavors in coffee and tea. Chlorine gives a faintly chemical, papery taste. Chloramine is more stable in solution and survives brewing, producing a metallic edge. Specialty coffee competitions specify water without either — it's that detectable in the cup.
Mineral content
Hard water (high calcium and magnesium) makes a heavier-bodied coffee with a more muted acidity. Soft water (low minerals) extracts more aggressively and produces a brighter, sometimes thinner cup. Neither extreme is ideal. Spring water from volcanic or limestone aquifers tends to land in the 50-150 ppm total hardness range — the Goldilocks zone for extraction.
Pipe scale and metals
Older municipal pipes leach copper, lead, and rust into the water. Most US cities are above the EPA limits, but "below the limit" still means some lead, some copper, some iron. The mineral content of your coffee depends partly on the age of the pipes in your building. Spring water bypasses all of this.
pH
Municipal water pH ranges from 6.5 to 8.5 across US cities. Coffee extraction is pH-sensitive. Brewing with water that's too alkaline (above 8) extracts too few of the bright acids and produces flat-tasting coffee. Brewing with water that's too acidic (below 6.5) over-extracts and produces sour, thin coffee. Spring water from most US springs is 7.0-7.5 — the sweet spot.
What Spring Water Does to Coffee and Tea
Coffee: brighter, sweeter, more aromatic. Spring water's balanced mineral content extracts coffee evenly — enough of the bright acids, enough of the bitter compounds, none of the metallic edge. Specialty roasters we work with report that their coffee tastes more like itself when brewed with spring water. The difference is most noticeable in light-roast single origins, where the terroir and processing are supposed to come through.
Espresso: more crema, more body, less bitterness. Hard water produces brittle crema and harsh shots. Soft water produces flat shots that lack body. Spring water's mineral balance produces crema that holds, body that's substantial, and shots that finish clean. Baristas who've switched report pulling more consistent shots with less dialing.
Tea: cleaner, more nuanced, longer-lasting. Tea is even more water-sensitive than coffee — it's mostly water, and the small amount of plant material releases flavors that interact with the minerals in the water. Spring water brings out the delicate notes in green and white teas, the layered tannins in oolong, and the deep body in pu-erh. Chlorinated water mutes all of this.
Matcha and herbal tea: most improved. Matcha in particular benefits from spring water. The umami in matcha comes from amino acids that read best in water without chlorine and with balanced minerals. Herbal teas (chamomile, mint, rooibos) taste sweeter and less bitter when brewed with spring water — the difference is comparable to brewing coffee with filtered vs. tap.

How to Switch Your Coffee and Tea to Spring Water
Fill your kettle with spring water. The simplest change. Brew with the same spring water you drink. Most people notice a difference within the first cup — brighter coffee, cleaner tea, less of the aftertaste that they used to think was normal.
Use spring water for pour-over and Chemex. These methods are the most water-sensitive because the coffee-to-water ratio is high and the extraction is short. Spring water's mineral balance shines here. The cup is more aromatic, the body is cleaner, the finish is longer.
Use spring water for cold brew. Cold brew is the longest extraction in coffee (12-24 hours), which means the water has the most contact time with the grounds. Chlorine concentrates in the concentrate. Mineral balance matters most. Spring water cold brew is noticeably smoother and less bitter.
Keep a glass pitcher of spring water in the fridge. Cold-brew concentrate, iced tea, and matcha all benefit from cold spring water as the dilution and mixing medium. A glass pitcher of the next in the fridge becomes the default for any cold beverage.
Use spring water for espresso machine water. Espresso machines are scale-sensitive. Limescale builds up in boilers and reduces extraction efficiency. Spring water has lower mineral content than hard tap water, which means less scale and longer machine life. Specialty roasters often install dedicated water filters for this reason — spring water is the simplest alternative.
